Chili is short for Chili Cor Carne, which means chili with meat. It has Mexican origin. It is a spicy stew containing chili peppers (sometimes in the form of chili powder), meat (usually beef), and often tomatoes and beans. Other seasonings may include garlic, onions, and cumin. The dish originated in northern Mexico or southern Texas.

What we are making today is a Vegetarian Bean Chili. It does not contain any meat and is perfect for all vegetarians. We will be using different kinds of beans with some spices, garlic, onions, and cumin.

It is also a low calorie meal with high protein due to beans. Such low calorie high protein meals are great for someone who is trying to watch his/her calories or trying to lose weight. The high protein content helps you control your hunger better while low calories helps you control weight.

Equipment

  • Deep Frying Pan

Materials

  • 2 tsp vegetable oil
  • ¾ cup tomato salsa mild or medium
  • tsp cumin ground
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • cup black beans rinsed and drained
  • cup pinto beans rinsed and drained
  • 1 cup red kidney beans rinsed and drained
  • 1 cup pureed tomato or tomato sauce
  • 3 cup low sodium vegetable broth
  • ¾ tsp kosher salt to taste
  • ¼ tsp black pepper freshly ground
  • 15 pieces corn tortilla chips
  • 1 piece jalapeno sliced pickled (optional)

Instructions

  • Heat 2 tbsp oil in a large, heavy pot over medium-high-. Cook salsa, cumin, chili powder, oregano, and garlic powder, stirring until fragrant and slightly reduced
  • Add black, pinto, kidney beans, tomatoes,3/4 Tsp tsp salt,1/4 tsp pepper. Bring to simmer, stirring occasionally stirring, until flavors are blended and chili is thickened in about 15 minutes. Taste and season with salt and pepper, if needed.
  • Ladle chili into bowls Top with crispy tortilla chips and jalapenos if using.

  • 1 ½ Tsp – ground cumin
  • 1 Tsp chili powder
  • 1 Tsp – dried oregano
  • ½ Tsp garlic powder
  • 1 ½ cup – black beans, rinsed, drained
  • 1 ½ cup – – pinto beans, rinsed, drained
  • 1 cup – red kidney beans, rinsed, drained
  • 1 cup – pureed tomato or tomato sauce
  • 3 cup-Low sodium vegetable broth
  • ¾ Tsp-kosher salt(to Taste)
  • ¼ Tsp(more) freshly ground black pepper
  • 15 corn tortilla chips
  • Sliced pickled jalapeno (for serving optional)

DIRECTIONS for VEGETARIAN BEAN CHILI

  1. Heat 2 tbsp oil in a large, heavy pot over medium-high-. Cook salsa, cumin, chili powder, oregano, and garlic powder, stirring until fragrant and slightly reduced (1-2 min.)
  2. Add black, pinto, kidney beans, tomatoes, 3/4 Tsp tsp salt,1/4 tsp pepper. Bring to simmer, stirring occasionally stirring, until flavors are blended and chili is thickened—about 15 minutes. Taste and season with salt and pepper, if needed.
  3. Ladle chili into bowls. Top it off with crispy tortilla chips and jalapenos if using.
