Vegetable Enchilada

Ingredients for Vegetable Enchilada

  • Cheese                     2 Table sp( To choice)       
  • Broccoli                  ½ Cup
  • Enchiladas  sauce
  • Tomato                   ½ Cup
  • Onion                      ½ Cup
  • Mixed Vegetable (Corn, Carrot, Green Beans ½ Cup)-
  • Capsicum Red         ½ Cup
  • Capsicum Green     ½ Cup
  • Spinach                   ½ Cup        
  • Ajwain                1 Tsp
  • Salt                      To Taste
  • Red Pepper             1 Tsp
  • Dry Coriander         1 Tsp
  • Turmeric                 ½ Tsp
  • Oil                           2 Table Spoon
  • Mustard                  1 Tsp
  • Roti/Chapati           4 piece
  • Rice and beans        1 Cup
  • Sour Cream           1 Cup
  • Green Salad            1 bowl
  • Coriander leaves and Green Onion to decorate

Directions

  1. Cut all vegetables into small pieces.
  2. Salute all veggies in Oil Add spices (see Video)
  3. Add Leftover Rice and Beans
  4. Let it cool a little
  5. Put enchilada Sauce/Tomato Sauce in a baking pan.
  6. On a plate lay Roti/Chapati. Put sautéed  Veggies and Roll tight.
  7. Keep in a baking pan. Put all  4 Rotis
  8. Put Sauce on Top and Cheese
  9. Preheat Oven and bake for 10 min at 275 F
  10. Check if cheese is melted.
  11. Decorate in a plate with Coriander and Green Onion
  12. Enjoy  nice dinner/Lunch with Sauer Cream and Green Salad

In place of Roti, tortillas can also be used.
