Vegetarian and Vegan Recipes from Sarala’s Kitchen – Vegan Saag Paneer. This is easy to make a healthy vegan / vegetarian recipe. It is good for any occasion.

Saag, sag or saga is a leaf vegetable dish eaten in the Indian subcontinent with bread such as roti or naan, or rice. Saag can be made from spinach, mustard greens, collard greens, finely chopped broccoli or other greens, along with added spices and sometimes other ingredients such as paneer.

Paneer (pronounced [pəniːr]) or Indian cottage cheese is a fresh cheese common in the Indian subcontinent made from cow or buffalo milk. It is a non-aged, non-melting soft cheese made by curdling milk with lemon juice.

To make vegan version of this delicious dish, we used Tofu but you can also use Paneer in place of Tofu. This is a low-calorie high protein recipe which good for weight loss. Each serving provides you a little more than 300 calories with about 18 grams of protein. The protein content helps control appetite better and reduced calorie helps with weight loss.

You can eat this with naan, bread, or roti.

Equipment

  • nonstick skillet

Materials

  • 8 oz tofu
  • ¼ tsp turmeric powder
  • 2 tablespoon olive oil extra virgin
  • 1 piece small onion finely chopped
  • 1 clove garlic minced
  • 1 tablespoon ginger minced
  • 2 tsp garam masala
  • 1 tsp cumin powder
  • 20 oz frozen spinach thawed and finelu chopped
  • ¾ tsp salt to taste

Instructions

  • Toss Tofu (or Paneer) with turmeric in a medium bowl until coated. Heat 1 tablespoon oil in a large non-stick skillet over medium heat. Add the Tofu (or paneer) and cook, flipping once, until browned on both sides, about 5 minutes. Transfer to a plate.
  • Add the remaining 1 tablespoon oil to the pan. Add onion and cook, frequently stirring, until golden brown, 7 to 8 minutes. (If the pan seems dry during cooking, add a little water, 2 tablespoons at a time.)
  • Add garlic, ginger, garam masala, and cumin. Cook, stirring, until fragrant, about 30 seconds. Add spinach and salt. Cook, stirring, until hot, about 3 minutes.

  • 8 ounces Tofu (vegan option), cut into ½ inch cubes. You can use Paneer also
  • ¼ teaspoon ground turmeric
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon minced fresh ginger
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 20 ounces frozen spinach, thawed and finely chopped
  • ¾ teaspoon salt
