Ragda Patties is made up of 2 components- the Ragda and the Patties. Ragda is the curry made with dried white peas. The second component of Ragda Patties is the potato patties aka aloo tikki. Ragda Patties is topped with cilantro chutney, sweet tamarind chutney, cilantro, chopped onion, tomato and sev.

Ragda Patties – Vegetarian and Vegan Recipes from Sarala’s Kitchen

Ingredients for Ragda Patties

• Potatoes – 4
• Vatana – 2 cup
• Sev – ½ cup
• Tomato – 1 cup
• Onion – 2
• Green Coriander — a small bunch
• Poha – ½ cup
• Ginger – ½ inch piece
• Garlic – 4-6 cloves
• Green Chili – 2
• Salt – 2 tsp (to taste)
• Red Pepper powder – 2 tsp
• Turmeric -1 Tsp
• Coriander dry 2 Tsp
• Cumin Seed – 1 Tsp
• Anardana – 2 Tsp
• Garam Masala – 1 Tsp
• Oil – 8-10 Tbsp
• Bread crumb – 1 cup
• Maida (all-purpose flour) 3 Tbsp

Directions for Ragda Patties

  1. Boil Potato and peel off
  2. Soak Vatana (Yellow Peas) for 2 hours and cook to tender/Soft
  3. Mess Potato, add ginger garlic, and green chili paste
  4. Mix well, add Poha powder anardana, Turmeric, and spice of your taste
  5. Add cut onion and green coriander
  6. Prepare Ragda—- In a frying pan, add 2 tbsp oil and Cumin seed, Saute Ginger, Garlic, Green chili paste Tomato, Onion, Spices, Salt, Red Pepper, Coriander powder, Turmeric
  7. Add Boiled Vatana and cook for 10 min at medium heat, Ragda is ready ( see Video)
  8. Make Patties—give Round a or any shape of choice, dip in a solution of Maida and water and then bread Crum
    9 Shallow fry the patties till these are golden from both side (see Video)
    10 Assemble Ragda and Patties, Green and Sweet Chutney, Onion Coriander, Sev (see Video) in a plate and it is ready
